Kitakata ramen is originated in Kitakata, Fukushima; is known for its aromatic clear niboshi (dried sardine) broth. Here in Kitakata Ramen Specialty Shop Kirin喜玲 , they are specializing in soup made using three different types of soy sauce, created in collaboration with a long established soy sauce brewery 星醸造 in Kitakata City.

Made using soy sauce from Soy Sauce Brewery 星醸造 in Kitakata City – Original Soy Sauce, White Soy Sauce and Re-brewed Black Soy Sauce.

The signature Golden Soy Sauce Ramen 特製喜多方肉中華そば (¥ 1200)
A bowl of hot piping soupy brothy ramen is always a good idea during winter chilly days. This golden soup was made with a blend of chicken bones, pork bones, kelp and 3 types of carefully selected dried sardines and mackerel. This golden coloured soup was light yet rich with the aroma of dried fish. A touch of Kitakata 星醸造’s original soy sauce that is a blend of dark and light soy sauce with a deep umami-ness and mellow sweetness was added into the golden soup. This result in the real “fresh” essence or I would say 鲜味.

The homemade curly noodles was smooth and in its chewy texture; topped with thicker slices of homemade charsiu that was simmered at low temperature to give rich flavours yet melt-in-the-mouth soft texture, shredded menma was seasoned with the brewery’s blended soy sauce, ajitama was marinated with homemade soy sauce and two pieces of crunchy umami seaweed!

Kitakata Kuradashi Miso Ramen 喜多方蔵出し味噌ラーメン (¥ 990)
The Limited time only ramen is made of a unique blend of red and white miso from Kitakata 星醸造 ‘s soy sauce brewery. This brewery’s miso is characterized by its rich aroma, full bodied, umami and sweet.

Kuradashi Spicy Miso Ramen 蔵出し辛味噌ラーメン (¥ 990)
Another limited time only ramen that was appeared in March (at time of my visit in 2024). This is made with soy sauce brewery’s white miso blended with Korean chili peppers and doubanjiang (or soy bean paste).

The other two we didn’t order were the Shellfish Stock White Soy Sauce Ramen 貝出汁白酱油 that comes with amber-coloured broth made of Asari clams and Shijimi Clams (seems to be freshwater clams according to the search) and a touch of the brewery’s “white soy sauce” and the Re-brewed Black Soy Sauce Ramen 黑酱油味玉中華そば that is done with a touch of Re-brewed soy sauce. One thing very special about this white soy sauce – it is made from wheat instead of the usual soybeans! While the Re-brewed soy sauce that is made by adding koji to the finished raw soy sauce and brewing it twice. How interesting!

Gyoza (¥ 390) came with 5 huge pieces and they were very juicy!

I always like that their ramen stores always have own merchandises for you to purchase home if you love their ramen or ingredients used to make the dishes. How I wish I could bring home the box of 生 ramen (with short expiry) but it was only halfway through my trip, so I have to give up the idea.
