I am happy to have my sushi kaki Jessie around, together we explored out. This time we did something we never have done before. We travelled to a new place, headed over to this new area (in our map-tionary) Setia Alam for a sushi lunch. YES!!! From KL to Setia Alam for a sushi lunch in Sushi Hana.

Sushi Hana

Located at Setia Alam, about 40 minutes drive away from KL city center. Sushi Hana is headed by this perfect sushi chef duo Chef Haruka and Chef Yogi, specializing in Edomae Sushi.

You may think … wahhh, so far le… but I must say, it definitely worth the journey, worth the time travelling over because the masterpieces from Sushi Hana are incredibly good.

We had the AYA 綺 which is available at lunch only, priced at Rm 198; comes with appetizer, chawanmushi, seasonal dish, 6 pieces sushi, sushi roll, miso soup and dessert.

My verdict, I like the whole course; simple, nice and great. The sushi(s) were elegant. Shari was on the point, made using red vinegar; teamed up with the simple-looking neta but they were all the hard work behind the scene such as the aging, storage, slicing… they were bursting with mega flavours!

Appetiser – Hijiki, Salmon Nanbanzuke, Goma tofu and goma sauce
Savoury, sourish, rich and creamy. Very nice combination. I was in love with the goma tofu and the goma sauce. So rich and creamy!

Mitsuba chawanmushi
Very simple dashi chawanmushi, silky smooth and hinted with the mitsuba herb.

Aji Furai with gari tartar sauce
Deep fried aji (horse mackerel) could be slightly oily when it came close to finishing. But thanks to the help of homemade pickled ginger tartar sauce that was served at the side, it brilliantly cut off the grease from the deep fried aji.

That day, we have Chef Yogi at service. I must say they have levelled up the game since Azabu time .

When it comes to sushi, I look deeply into shari because shari is the soul to the sushi. I am super happy I found the shari I love over here!

The shari I had for the first sushi was a little soft. But then Chef Yogi magically twisted the condition on the second sushi onwards. The shari were at the right temperature; plump and airy, at its great compactness and bursting with flavours. I really cannot wait for the next visit.

If you are a sake lover, do add on for the 3 kind of Sake Pairing that is priced at Rm 100 for 3 pairing. Sushi Hana has a great collection of nihonshu (Japanese sake) and many of them I have not seen before! Also, Chef Yogi is really good in pairing up his sushi and nihonshu.

He advised us to start up the pairing from sushi onwards. He also asked us what kind of profile we fancy in sake, be it sweet or dry or any note. I always have my own preference but this time I left it to Chef because I would like to know chef’s preference and how he pairs them with sushi. Haha. Good thing, all the pairings he introduced were very well match to the sushi.

This junmai was pretty special. When I had it on its own, it was light and punching. But a sip after first and second sushi, the flavour was softened and it created a great harmony with sushi. The flavours that left inside the oral cavity were amazing.

Ohhh I like this Junmai Ginjo!!! It has a great aroma!

Chef shared his Senkin Classic Muku with us. It was a wow too in creamy yoghurt-y.

Ikura and Uni bowl
Something different from the typical ikura! They lightly blanched the ikura, and it then give a 糯糯 texture but not. Hmmm, how to say ya…. Words couldn’t describe it, please try it yourself. It was very special and we had a top up with uni to make it a ikura and uni bowl. So sweet and umami!
