Light Honey Butter Cake; the comforting one

When thing went so wrong last weekend (the thing was, I was tooooooo and extremely free, never had it before). I dived in to the kitchen and presented this out.

Light Honey Butter Cake

Light Honey Butter Cake
(Recipe adapted from Table for 2 or more)

225g butter
140g sugar
1tsp vanilla
2tsp honey
5 egg yolks
200g flour
¾ tsp salt
5 egg whites
45g sugar

1.Preheat oven at 160C/180C (mine was done at 170C).
2.Line a 9 inch square pan.
3.Cream butter, 140g sugar, vanilla and honey on a medium speed for 5 mins.
4.Beat in egg yolks one by one.
5.Sift flour and baking powder, mix them into the batter.
6.In a clean dry bowl, beat egg whites until soft peaks, add in 45g sugar gradually and beat until stiff.
7.Fold in egg whites into the batter
8.Pour the batter into the lined pan and bake for 40 mins or until toothpick comes out clean.

The cake was so light, airy and buttery, something comforting which made me kept nom-ing one after another. For this recipe, I reduced 20g of sugar and substituted it with another big teaspoon of wild honey; I omitted the vanilla as well. As I do not have a 9 inch square pan, I used the 10inch square pan and that was why it was flatter.

As for this weekend?! If the thing went wrong again…
